I love soup.
One of my current favourites is Pea and Mint.

Recipe;

500g frozen peas.
A good handful of garden mint.
1 chopped onion.
1 clove of garlic.
1 vegetable stock cube.
A few coriander leaves (optional).
1 Glass of white wine ('pinot grigio' is perfect).

Soften the onion in a little oil, then whack in the crushed clove of garlic, coriander, white wine and mint.
Add the peas and swirl them around in the mix, letting the wine reduce a bit, before adding in the peas, followed by boiled water.
Let that come to the boil and add the stock cube, then simmer for 10 minutes.

Take the contents and run them through a blender for a couple of minutes until smooth.

Season carefully and add cream to taste.

My most recent 'Soup Adventure' was with 'Broccoli & Feta'.

Broccoli and Stilton is a common Vegetable/Cheese combination, but this is nicer ( I think).

Really simple to make.

Get your biggest pot and chuck in a head or so of (de-stalked) Broccoli into cold water.
Add only a litle salt and a vegetable stock cube.
(Basil, Coriander, Garlic and White Pepper are all appropriate to taste, but leave them out for now.)

Once the Broccoli is soft (about 20-30 mins), add in enough 'Feta' cheese to give a 'creamy' texture.
Maybe about two to three 'fingers' worth.
(Add optional herbs and seasoning at this point)
The Feta will melt into the broth, which you should then blend in a food processor before serving.

You'll have a healthy soup, without the aftertaste of Stilton.

The aftertaste of stilton is what makes broccoli and stilton soup so wonderful! - mmmmmmmmmmn, stilton...

Feta is for wimps!

Are you a mighty boosh fan Lesley? Such weirdness and surreality and yet it works so well!

My fav soup is the Sweetcorn and Chicken stuff you tend to get as a starter in Chinese restaurants, although I always ruin my main meal by filling up on it!

Yes, I have recently discovered the Mighty Boosh show and it definitely appeals to my irreverent sense of humour.

Anything weird and surreal is good by me!
